One of my colleagues is vegan and she just felt like baking the other day. Lucky us, we got to eat them 🙂
I am actually not a big fan of any baking goods that are made of or taste like chocolate. Thus, I’d choose fruit tarts or pie, or warm apple/cherry turnovers over chocolate pastries at any time, BUT those brownies are absolutely delicious!!
So, no matter if you’re invited to a birthday party, holiday celebration or simply want to satisfy your (vegan) sweet tooth, then here you go!
Ingredients:
- 200 g chocolate chips (dark chocolate, 75% or darker)
- 270 g (whole wheat) flour
- 150 ml soy or rice milk
- 70 g sugar
- 125 ml sunflower oil (or alternatively: sesame oil)
- 150 g walnuts (or other nuts like almonds)
- 125 ml maple syrup
- 50 g cacao powder
- 1 tea spoon baking soda
- 8 g (or 4 tea spoons) vanilla powder
- 1 tea spoon baking powder
- Optional: dark chocolate for the icing
Preparation:
- Preheat oven 175°C / 350°F
- Mix the (whole wheat) flour, sugar, cacao powder, vanilla powder, baking soda and baking powder together
- Then add the soy milk, maple syrup, and sunflower oil and mix it well
- Add the walnuts (in small pieces) and chocolate chips and mix them in
- Fill the batter in a baking plate or baking dish
- Bake for 25 minutes
- Let the brownies cool down entirely before cutting them
- Optional: add chocolate icing for the chocolate lovers 🙂
