It’s the perfect time for baking, either alone or with your loved ones! Christmas cookies are delicious but oftentimes full of sugar and butter. BUT here is a healthy, less sweet but also delicious, alternative for you: EINKORN COOKIES! 🙂 Einkorn is the “new” super food these days. It’s the most nutritious grain with a high protein and phosphorous, potassium, and Vitamin B6 content as well as many other very good-for-you ingredients.
After all my travels, I finally had the time to bake again! So, I decided to try out my Einkorn flour from Biojoy and to bake some fresh and healthy buttermilk red-currant Einkorn muffins. They turned out to be super delicious, but also different from other muffins that I have baked so far. The Einkorn flour mixed with coconut oil and vanilla extract made it a little less fluffy and more “crunchy” — YUMM!
